    Punjabi Yakhni Mutton Pulao | Eid ul Adha Special |

    Hello everyone , a very happy Eid-ul-Adha mubarak in advance from me. Today I am sharing this delicious recipe of Yakhni Pulao which is a must make in our home on all Eids. I hope you try and like it as well.

    WHAT YOU NEED

    2 Cups Of Rice  ( Pre-soak the basmati rice for at least 30 minutes )

    Preparing Yakhni

      • You will need
        • Mutton                                1.5 Lbs or around 1 Kg
        • Himalayan Salt                   1 Tsp
        • Fresh Ginger                      Small piece about 1 inch cut in half
        • Cumin Seeds                      1 Tsp
        • Whole Black Pepper           1 Tsp
        • Water                                  4 Cups
        • Use the information below to figure how much water you need.
          1 Cup Rice  3 Cup Water
          2 Cup Rice  4 Cup Water
          3 Cup Rice  5 Cup Water

    Instructions

    1. Add 4 cups of water to pot
    2. Add Meat
    3. Add Ginger, Whole Black Pepper, Cumin Seeds , Salt .
    4. Bring it to boil and leave it on medium heat for 20 min.
    5. After 20 minutes drain the Meat and keep Yakhni (broth) aside. You should have about 3 cups of Yakhni (broth) left.

    Preparing Pulao

    You will need

    • Onion                              1 Medium Sliced
    • Ginger/Garlic Paste         2 Tbsp
    • Oil                                    1/2 Cup
    • Garlic                               1 Bulb
    • Whole Coriander              2 Tbsp
    • Rice (Pre-Soaked)           2 Cups
    • Himalayan Salt                Per taste
    • Cumin Seeds                   1/2 Tsp more or as needed
    • Whole Black Pepper        1/2 Tsp more or as needed
    • Bay Leaves                      3-4 (optional)

    Instructions

    *Take your garlic and whole coriander add it to the blender with 1/2 cup water. Blend it well and drain the garlic/coriander water. Keep the water aside.

    1. Heat Oil
    2. Add Onions
    3. Fry till light brown ( golden brown if you prefer rice to get a darker color)
    4. Add Ginger/Garlic paste
    5. Add Meat
    6. Fry
    7. Add Bay leaves.
    8. Bring in your drained garlic/coriander water .
    9. Start adding little by little to the meat. Do not add all at once.
    10. When it evaporates add more and so on until you run out of it.
    11. Adding it a bit by bit will add an interesting aroma to the meat.
    12. Fry for about 10/15 min.
    13. Bring in your 3 CUPS of yakhni (broth) that you put aside earlier.
    14. Add it to the meat.
    15. Check for salt. add more if needed
    16. Add rice.
    17. Do a final check on salt.
    18.  Cover and cook on low heat for 15 min.
    19.  Enjoy with raita and other currys.

    Mint & Cilantro Chutney | Unbelievably Tasty Must Try |

    Hello everyone and welcome back !  Here is the chutney recipe I used in my shawarma but this isn’t limited to shawarma you can serve it as a side with plenty of dishes such as pulao, biryani, fish etc

     

    WHAT YOU NEED

    • Tamarind Paste               1 Cup
    • Garlic                                 15 cloves
    • Cilantro                             2 Bunch (Fresh)
    • Mint                                   2 Bunch (Fresh)
    • Vinegar                              2 TBSP
    • Lemon Juice                    1 Tsp
    • Salt                                    per taste
    • Sugar                                2 TBSP
    • Cumin Seeds                   1 TBSP
    • Green Pepper                  4-5 (Serrano) If you use other kind , take a guess on quantity add more later if needed.

    Instructions

    1. Peel garlic cloves
    2. Wash everything well
    3. Add to the blender
    4. Serve and Enjoy.
    5. Use it with fish , pulao , biryani , shawarma or anything else you like it tastes great with everything,
